INGREDIENTS
  • 2 lbs long grained rice
  • 3oz equal parts of fresh spinach, dill, green onion tops, coriander and fresh parsley
  • 6 white fish fillets
  • ¼ cup cooking oil
  • 1 tsp saffron
  • 1 tbsp ho water
  • 3 tbsp cooking oil

Vegetable Polou with fish



Preparation
  • Prepare rice according to directions for chelou and drain
  • Wash the greens, chop, finely and cook in the water adhering to the leaves until softened
  • Mix green with rice
  • Fry fish in ¼ cup cooking oil until lightly brown on both sides
  • Put half of the rice in an oiled deep saucepan or casserole
  • Arrange pieces of fish over the rice and cover with remaining rice
  • Make a hole in the center, cover pot tightly, and bake in a preheated 350 degree oven for 1 hour
  • Just before serving, mix saffron with hot water and the 3 tablespoons oil and sprinkle over the rice
